Chocolate Avocado Mousse

I got inspired to test out this chocolate avocado mousse recipe after having the tastiest chocolate avocado mousse at Sova Vegan in Dublin last weekend (an incredible vegan restaurant, if you have the chance to try it out, go!).

It’s creamy, decadent… and so simple to make! What's more, it's made with all natural plant-based ingredients, which makes it a winner for me. The star of the show is of course the amazing avocado and its silkiness really transforms the texture, adding a depth of flavour to the dessert that goes perfectly with the sweetness of the date syrup.

I often get my fruit and veg from my local green grocer in Brixton where I can sometimes pick up three or four big avocados for a pound! Much better than supermarkets where I sometimes pay a pound per avocado. They are, of course, much riper than the supermarkets’ avos, but that just gives me an excuse to use them up quickly in yummy recipes like this!

Making the mousse takes all of five minutes, but remember to allow 1-2 hours for the mousse to set in the fridge. You could probably speed up the process by leaving them in the freezer for half an hour instead, but I haven’t tried this myself.

Makes 1 serving

1 ripe large avocado
1 tablespoon raw cacao powder
1 tablespoon date syrup
1 teaspoon coconut sugar
Pinch sea salt
Drop vanilla essence

Optional: fruit, nuts, seeds, sweetener to top.

Tip: You could sway the date syrup for maple syrup, honey or any other sweetener if you prefer!

1) Mix the avocado in a food processor or blender
2) Add all other ingredients
3) Taste for sweetness, add more coconut palm sugar or date syrup if necessary
4) Transfer mixture to a dish and set in the fridge for 1-2 hours
