Beetroot and Maca Zoats


Without sounding too pretentious, this beetroot and maca zoats recipe is absolutely delicious. It's a combination of caramel-like maca, sweet banana and beautiful pink beetroot.

You don't need loads of ingredients to make this recipe tasty, and you could easily swap the maca for cinnamon if you prefer a less intensely caramel taste. 

I really love adding courgette to my breakfast as it's an easy way to sneak in a portion of veg at the beginning of the day. I'm not a very savoury person, so breakfast is usually sweet for me. Whilst I usually sweeten my porridge bowls naturally with banana, cinnamon or date syrup, I think it's always good to get a variety of veggies in so I'm not just eating fruit sugar.

Ingredients


1/2 cup grate courgette
1/2 cup oats
1/2 cup almond milk
1/2 cup water
1 small banana, mashed
1/2 tablespoon date syrup
1 teaspoon coconut oil
1 teaspoon maca
1 teaspoon beetroot powder (I use Of the Earth Superfoods)
1/2 teaspoon cinnamon


Method


1) Melt the coconut oil in a pan over a medium heat
2) Add the grated courgette and mashed banana and stir for 1-2 mins. You may need to add a drop of water if the banana and courgette start to catch.
3) Add the rest of the ingredients and stir for 3-5 mins, adding more water depending on how you like the consistency
4) Top with your favourite toppings. I love adding peanut butter, date syrup and frozen fruit!

Tip: You may need to add more liquid depending on how thick you like your porridge. I usually just add a drop of water to thin the mixture out.
