Chocolate, Cucumber & Kale Smoothie Bowl
That's right, chocolate, cucumber AND kale.
I've taken my smoothie bowl game to new heights by combining chocolate with kale and cucumber. Don't worry, you can't taste the kale or cucumber in this bowl as the chocolate masks the flavour really well. This breakfast recipe is a super easy way of getting three of your five-a-day in one go.
I always have either porridge or a smoothie for breakfast, which I really love, but it can sometimes get repetitive having the same thing over and over again. That's why I've been trying to mix and match different flavours and ingredients. You may have seen my broccoli and berry porridge recipe (it's a new favourite) or my beetroot and banana oats recipe - both are really delicious but include unusual vegetables to have at breakfast.
I love this recipe for all its nutritional benefits: radiance boosting anti-oxidants from the cacao, healthy monounsaturated fats from the avocado, lots of fibre from the kale... the list goes on. I put the peanut butter as optional - you don't really need it as the smoothie tastes amazing already, but it adds a great flavour and a good source of protein!
Handful kale, rinsed
1/2 an avocado
1 tablespoon organic raw cacao powder
2 teaspoons date syrup
250ml almond milk
2 ice cubes
1 tablespoon peanut butter (optional)
1) Add all the ingredients to a blender and whizz. You may need to add some water if the mixture is too thick for your taste.
2) Make into a smoothie bowl by topping with your favourites: I added frozen raspberries, cacao nibs and pumpkin seeds.
