Sweet Mango Nice Cream

One of the things I miss most about travelling - besides the breathtaking scenery, kind people and engrossing culture - is the FOOD (obviously).

No matter where I was - Vietnam, Thailand, Bali - most days I would get a smoothie from a street stall on the side of the road. In Vietnam and Thailand in particular, they did AMAZING mango smoothies. Like melt-in-the-mouth uber refreshing and sweet smoothies.

They usually mixed the delicious fresh fruit with either condensed milk or water and a thick sugary syrup. Most of the time I'd ask for it without the syrup, but sometimes I'd forget and end up with a drink that was way too sweet. And that's saying something because I have a MASSIVE sweet tooth.

I was thinking about how much I loved these smoothies the other day; the variety of exotic fruits (hello avocados, papaya and the freshest mango everrrr) so I wanted to recreate these tastes from my travels, and of course add a healthy twist.

I decided to make a refreshing bowl of sweet mango nice cream - because it basically tastes like mango sorbet and I love any excuse to have something dessert-like for breakfast. But if you'd rather have it as a thick smoothie, just add 1/2 cup water and replace the frozen bananas with fresh ones.

Sweet Mango Nice Cream

1/2 frozen mango
2 frozen bananas
1 tbsp date nectar (or maple syrup)
1/2 cup coconut milk (you can use any other plant based milk too)
1/3 cup water

1) Chop the banana and mango into small pieces, then add all the ingredients to a blender and whizz together
2) You may need to add a little more liquid if the blender is struggling to mix the ingredients7

Tip: I topped my mango nice cream with blueberries, more date nectar and cacao nibs - for an extra crunch!
