Energy bites are amongst my favourite sweet treats. Not only are they super yummy and packed full of crazy healthy nutrients like protein, good fats and omega 3, but they're also SO simple and easy to make... You basically just bung all the ingredients into a food processor, then form it into balls!

As always, these energy bites are refined-sugar free, dairy free and gluten-free too. I often make a big batch of them on a Sunday afternoon so that I have plenty of healthy snacks to take to work during the week. Much better than reaching for a Kitkat when the 4pm slump hits...

They're so versatile that you can literally follow the formula of nuts + seeds + dates = YUM, adding whatever extra ingredients your heart desires. I like to get inventive and throw together different combinations each time I make them. My latest combo is these cashew and coconut bliss balls. They are really sweet so they curb all sugar cravings, and you only need one (or maybe two!) to satisfy you.

Recipe: Coconut Cashew Bliss Balls

Ingredients

(Makes 12-15)
75g cashews
50g almonds
100g soft, pitted dates
50g sunflower seeds
3 tbsp honey (or maple syrup) 
1 tbsp chia seeds
4 tsp dessicated coconut
2 tsp cinnamon
2 tsp almond butter

Method

1) Add the cashews and almonds to a food processor and process for around 30 seconds, until crumbly.
2) Add all the other ingredients and process until the mixture is a sticky consistency. You may need to scrape down the sides to ensure all the mixture has been coated in honey. If the mixture isn't sticky enough, add more honey.
3) Take spoonful of mixture in the palm of your hand and firmly squish into a compact ball. Leave in the fridge for an hour to firm up.

NOTE: the mixture will be crumbly when you try to mould it into balls, so get them as close as you can to a ball shape, then remould them after they have set in the fridge for an hour.
