Creamy Superfood Choco-oats

Christmas is just around the corner and I've pretty much finished my Christmas shopping (just about!). With the festivities in full swing and lots of delicious seasonal flavours filling the kitchen, I thought now was the perfect time to spruce up my usual oaty-breakfast recipe.


Oats are a great choice for breakfast. They're quick, versatile and easy to make, and they provide excellent fuel to sustain hungry tummies until lunch time. However it can get a little boring having the same bowl of  porridge for breakfast every day. So here's a deliciously decadent (but still very nutritious) superfood oats recipe.
It has got to be one of my absolute favourite, indulgent breakfasts - perfect for a Sunday morning, or any day you need a chocolatey boost!

The creamy coconut milk pairs so perfectly with the rich cocao powder and with all the super nutrient-filled toppings, this breakfast sets you up amazingly for the rest of the day.
Of course the toppings are all optional- I just love packing in a healthy dose of omega 3, vitamin E and protein through these nuts and seeds at breakfast time, but you can have as few or as many toppings as you like!

Creamy Superfood Choco-oats

Ingredients
1/2 cup organic rolled oats
1/2 cup coconut milk (or other plant based milk)
1/2 cup water
1 tsp coconut oil
2 tsp organic raw cocao powder (or 4 tsp of raw cocoa powder)
1 ripe banana
1 tbsp peanut butter
1 tbsp chia seeds
3-4 almonds, crushed (optional)
1 tbsp sunflower seeds (optional)
1 tsp flaxseeds (optional)
any fruit to top - blueberries or blackberries work particularly well with the cocao!

Method
1. Gently melt the coconut oil in a pan. Slice the banana and add half of it to the coconut oil. Stir for 2-3 mins
2. Add the oats, cocao powder, coconut milk, and water to the pan and gently warm over a medium heat. Stir regularly for 5-10 mins, or until the oats have absorbed all of the liquid.
3. Transfer your oats to a bowl and top with the rest of the banana, peanut butter, chia seeds, crushed almonds and mixed seeds.

TIP: You can try mixing up the toppings; add different nuts, seeds, fruit, nut butter or even maple syrup if you like your porridge super sweet!

Mix in the peanut butter to melt-  it tastes so good!
