No Bake Brownies
This is my new favourite snack- they're so deliciously decadent yet full of healthiness!

When I told my boyfriend I was making brownies, I don’t think Raw Vegan ones was quite what he had in mind. However these little squares of yumminess taste just as good (if not better) than their refined-sugar filled counterparts, with a melt-in-the-mouth texture and delicious gooeyness.
The method couldn’t be easier, and because the recipe is so versatile, you can swap the mixture of hazelnuts and walnuts for any other nuts you like. Almonds work really well and Deliciously Ella’s recipe uses pecans.
Now, on my first try of making these, I didn’t put enough dates in, which meant the mixture wasn’t sticky enough and the brownies didn’t hold together properly. So whether you’re using dates, dried apricots or a mixture of the two, make sure you add the correct quantities: 2 cups dates to 1 cup nuts.
So here’s the recipe for my 5-minute no-bake vegan brownies. They’re gluten-free, dairy-free, and refined-sugar free – but packed full of wholesome nutrients and tasty goodness. They’re perfect for an afternoon pick-me-up and go hand-in-hand with a cup of tea. Let me know if you try these!
2 cups mixture of dates* (Medjool are the best, but ordinary dates work well too!)
½ cup hazelnuts
½ cup walnuts
2 tbsp sunflower seeds
2 tbsp peanut butter
4 tbsp raw cocoa powder (or 2 tbsp cocao)
2 tbsp maple syrup (optional)
*I used a mixture of dates and apricots because I ran out of dates!
1) Add the nuts to the food processor, and blend until crumbly.
2) Add the dates and blend again, then add the rest of the ingredients.
3) When the mixture is a sticky consistency, line a baking tray with cling film and spoon the mixture in to it.
4) Place the tray in the freezer for an hour or so to firm up, then cut into squares and enjoy!
