Banana and blueberry oats

Since returning home from travelling, you'd think I'd have had loads of time to get back into cooking great travel-inspired recipes..Nope! I've been so busy visiting family and friends, that I just haven't had chance to do much recipe developing OR blogging! However, something quick and easy that I have enjoyed making almost every day is yummy porridge! I missed it so much whilst in Asia.

Breakfast in our society tends to be quick, easy and unhealthy; sugar-filled cereals, white bread, sweet spreads, etc. Oats are so great because they give you lots of energy and fill you up - meaning you're less likely to reach for unhealthy snacks throughout the day!

Since the weather is getting colder and the mornings aren't so bright, now is the perfect time to spruce up the boring old porridge recipes, with some more exciting, but equally as comforting, delicious bowls of oats.
Now, anyone following me on Instagram (@bellefoodandfitness) will know just how much I love oats for breakfast: I post pictures of my yummy oaty bowls pretty much every day! 

Here's a recipe for my favourite bowl of banana and blueberry oats. These are my favourite toppings, but you can add whatever you like! More fresh fruit, seeds, crushed nuts, or your favourite nut butters... Whatever you fancy. I promise that the gooey bananas and melted blueberries will give you warmth even on the coldest of days! 

Banana and blueberry oats

Delicious and creamy blueberry and banana oats recipe


Ingredients
-half a cup blueberries
-one chopped banana
-one cup of oats
-1.5 cup of coconut milk (or other plant-based milk)
-crushed almonds
-handful of mixed seeds (such as Linseeds, pumpkin, sunflower) 
-1 tbsp chia seeds
-1 tspn peanut butter 

Method
1. Add the oats, blueberries, half the chopped banana, and chia seeds to a bowl. Add the coconut milk and mix.
2. Heat in the microwave for 1 minute, then stir. 
3. Heat for another minute. If the oats have't absorbed all the liquid, heat for a further 30 secs.
4. When the oats have soaked up all the water, remove from the microwave and top with the remaining banana, mixed seeds, crushed almonds, and peanut butter.
TIP: I also love to add cinnamon to my oats; it tastes great with banana!
