Sweet, sweet potatoes

I am a sweet potato junkie; wedges, fries, mash, jacket - I can't get enough. Not only is this wonderful root vegetable a delicious alternative to regular potatoes, but it's bursting with iron, vitamin D, and vitamin C, which means it's great for strengthening your immune system and helping to maintain your skin's youthful elasticity.  

Thanks to their magnesium content - the mineral responsible for anti-stress and relaxation - sweet potato plays a vital role in helping us to cope with anxiety and stress. In a world where everyone is a slave to the next task on their to-do list, it's never been more important to look after our inner selves and nourish our own wellbeing. Far too many people forget that they deserve to put themselves first and feel good. Eating nutritious food like sweet potato gives our immune system the boost it needs to cope with the demands of modern living!


Tonight I had sweet potato wedges served with a medley of roasted vegetables and chorizo. But the really great thing about them is their versatility - I love them with roasted chicken or as part of a summer salad. 




Method: 

1. Heat oven to 200 degrees.
2. Chop sweet potato into evenly sized wedges. 
3. Drizzle with olive oil and sprinkle with Cajun powder, salt and pepper. Add a few sprigs of fresh rosemary. 

4. Bake in oven for 35 minutes, turning halfway through cooking to ensure they are cooked evenly.
