Summer BBQ chicken kebabs

As I was cycling home from work on this warm Saturday afternoon, the faint smell of families barbecuing their favourite meats filled my nostrils. This delicious smell inspired me to share my favourite BBQ chicken kebab recipe, which is a big hit with all of my family (even my fussy little brother!)

2 Chicken breasts, chopped into chunks
1 courgette
1 red onion
1 pepper (any colour works great)
Cherry tomatoes

For the chicken marinade:
2 lugs of olive oil
1 tbsp Jamaican jerk spice*
1 tbsp honey
Juice of half a lemon

1: Make the marinade. Mix all the ingredients together in a large bowl.
2. Add the chicken chunks and stir until they are coated evenly in the marinade. 
3. Leave for at least half an hour- the longer the better.
4. Meanwhile, prepare the veg by cutting them each into thick chunks.
5. Alternatively thread the chicken pieces with the veg on the metal skewers (or pre-soaked bamboo skewers).
6.Heat over the barbecue for 10-15 minutes or until chicken is thoroughly cooked.
Enjoy with a mixed green leaf salad.

*I use this Schwartz Jamaican Jerk spice, but other alternatives work too.
