Garlic and chilli prawn salad

This lunch idea is inspired by my recent holiday to Mallorca, where I got to try lots of delicious, local Spanish cuisine. Some of my favourite dishes were seafood based, and I could not get enough of the fresh prawns and homemade aioli on offer in most restaurants.

It's pretty bleak weather outside today here in rainy old England, so I decided to make a lunch that would brighten up my day. It brings back memories of a wonderful holiday in the sun, where my boyfriend and I ate delicius food, drank Spanish sangria, and enjoyed spending time together after a stressful final term of exams and coursework at uni!

This recipe is just for one, (none of my family enjoy seafood!) but you can easily double or quadruple the portions as needed.

Garlic and chilli prawn salad

200g king size prawns
1 tbsp butter
Glug if olive oil
1 clove of garlic, crushed
1 -2 tbsp lemon
1/4 tsp paprika
1/2tsp chilli flakes
Salt and pepper

1. Heat a frying pan with butter and olive oil.
2. Add prawns and garlic, sauté for a minute.
3. Add chilli flakes, paprika, salt, pepper and lemon juice. Sauté for a further two mins, making sure the prawns are cooked evenly on each side.
4. Add the prawns and cooking juices to your salad, and serve with a wedge of lemon.
