Balsamic Tomato and Chicken Salad

It's that time of year when tomatoes are at their very juiciest and tastiest. Our tomato plants have been harvesting at such a rapid speed lately that I haven't seen the bottom of the tomato tub in weeks! 
We have a mountain of fresh tomatoes each day, and as a result I've been trying to get creative and incorporate them into nearly all of my summer recipes. Tomatoes are jam-packed with antioxidants and vitamin C and some research suggests that they even  help prevent depression, due to their lycopene content. So we should all lap up the health benefits now whilst they're in season and at their best!
Here's a typical, healthy summer salad recipe, jazzed up a bit by some juicy balsamic tomatoes. The balsamic really complements the flavour of the tomatoes, and together they go perfectly with grilled chicken.

The great thing about this recipe is it's all ready at pretty much the same time, so it's quick and easy to whip up. Perfect for a lazy summer evening- you could even do it on the barbeque.

Recipe: Balsamic Chicken and tomato salad 


For the tomatoes
Cherry toms
1 clove of garlic
Glug of olive oil
Glug of balsamic vinegar
Juice of half a lemon
Salt and pepper

For the chicken
1 chicken breast
1 clove of garlic
Fresh rosemary 
Olive oil 
Salt and pepper 

For the salad dressing
Glug of olive oil
Glug of balsamic vinegar
Juice of half a lemon
Tsp parsley
Salt and pepper

Iceberg lettuce
Rocket leaves
Half a pepper
Half a cucumber 

1. Start by flattening the chicken breast by hitting it with a rolling pin.
2. Make your chicken coating. Add all the ingredients into a bowl, mix well and coat the chicken evenly on each side. Place your chicken on one side of the grill pan.
3. Make the balsamic tomato marinade. Add all the ingredients together in a bowl and mix well.
4. Chop your cherry tomatoes into halves and place on a sheet of tinfoil on the other side of the grill pan.
5. Pour over the balsamic marinade, ensuring that every tomato gets covered
6. Put the grill on high heat and grill the chicken and tomatoes for 10-12 mins. Make sure you keep an eye on the chicken and turn it over half way through so it's evenly cooked.
7. In the meantime, assemble your salad and make your salad dressing. Mix all the salad dressing ingredients in a dish ready to top your salad with.
8. Once the tomatoes and chicken are cooked, remove from the grill.
9. Chop the chicken into strips and add to the salad.
10. Add the tomatoes and any juice that has escaped on to the tinfoil to the salad- it's super tasty.

Voila! Easy and delicious chicken salad ready in under 20 minutes  :)
